Mom Mom's Apple Cake

Ingredients
4 Large Apples (Pare and Slice)
2 tsp Cinnamon
1/2 Cup Sugar

3 Cups Flour
3 tsp Baking Powder
1/2 tsp Salt
2 cups Sugar

1 Cup Oil
5 Eggs
1/2 cup Orange Juice
3 tsp Vanilla
Directions
Preheat over to 350 degrees

1. Cut apples and mix with Cinnamon and Sugar.  Set Aside

2. Sift first 4 ingredients together and make a well in the center

3. Add Oil, Eggs, Orange Juice and Vanilla to Flour Mixture.  Beat well for 4-5 minutes on medium-high  setting (#4 on Kitchenaid mixer)

4. Coat a 10" Tube pan with shortening and flour. 

5. Pour in 1/2 of the batter and top with 1/2 of the apple mixture.  

6. Add most of the remaining batter (reserve a small amount) over the apples and then add the remaining apples and sprinkle with some cinnamon.  

7. Add the reserve batter to cover the apples slightly.

Bake at 350 degrees for about 1 1/2 hours or until tester comes out clean.  Test early to prevent over baking.
