one recipe whole wheat naan, for 12 mini pizzas
6 (9 oz) pkg frozen chopped spinach
1 can chopped pimentos
1 to 1-1/2 C. chopped onion (I prefer red onions)
1/3 C. feta, crumbled
1 lb. mozzarella, shredded (can be a mix of plain and smoked)
1/4 lb. parmesan cheese, optional
Defrost frozen spinach and squeeze out water. Mix in a bowl with pimentos, onions and feta cheese. Blend shredded cheeses.
Place an even amount of spinach mix on top of each piece of whole wheat naan. Cover evenly with shredded cheeses.
Bake in a 350 onion for approximately 12 minutes or until heated through and cheese has melted and beginning to brown. Or freeze uncooked individually in a vacuum sealed bag for storage.
