1 C. bulgar wheat
1/2 C. chopped dried cranberries
1 C. boiling water
1/2 C. chopped fresh parsley
1/4 C. minced red onion
1/4 C. fresh lemon juice
2 T. chopped walnuts, toasted
1-1/2 T. walnut oil
3/4 t. salt
1/4 t. freshly ground black pepper
Combine bulgar and cranberries in a medium bowl. Add 1 C. boiling water, and let stand 30 minutes or until water is absorbed. Fluff bulgar mixture with a fork. Stir in remaining ingredients, and toss gently to combine.
