My Marinara

Ingredients
12 lbs tomatoes, peeled, seeded and roughly chopped
1 C. yellow onion, chopped
4 large garlic cloves, chopped (about 1/4 C.)
3 T. olive oil
1-1/4 C. minced fresh basil
1/4 C. minced fresh oregano
salt, to taste
pepper. to taste
Directions
Heat oil in large sauce pan over medium-low heat.  Add onions and cook low and slow until just beginning to brown.  Add garlic, salt and pepper to taste and heat for 30 seconds or until garlic is aromatic.

Add chopped tomatoes and simmer to let the juices release and cook down about an hour.  Using a masher or immersion blender, blend to desired chunkiness.  Add basil, oregano and additional salt and pepper, if desired.  Simmer additional 15-30 minutes to allow flavors to meld.
