1 T. EVOO 1/4 C. golden raisins 1 T. honey 1/2 t. Madras curry powder 2 T. minced fresh cilantro salt and pepper, to taste
Preheat oven to 500. Peel and cube 6 C. butternut squash (about 2 medium). Toss squash in oil, and season with salt and pepper to taste. Place squash in a single layer on a jelly-roll pan. Bake at 500 for 10 minutes or until tender. Remove from oven; toss squash with remaining ingredients. Serve immediately.
